What’s not to like?!
Spinach tends to be the go to leafy vegetable for most of us since it is available all year around. Not only is it easily available in the market, it is also quite easy to grow on a window sill or garden. Tired of having your dose of spinach in its usual form of palak paneer, alu palak and the likes? We tried giving the humble spinach an interesting spin by mixing it up with a combination of tart fruits and nuts to whip up a healthy fresh salad.
Have this as a side the next time you have that evening barbeque. Or have a bowl of it as a snack on a hot summer day. This crunchy zesty salad can be enjoyed at any time of the day. It packs in all those essential nutrients along with oodles of flavor
Time: 5-10 mins (Serves 2-3 people)
- 1 bunch of baby spinach leaves
- 1/4 cup cheese – feta or cheddar go well
- 1/2 cup chopped walnuts/pecan nuts
- 1 tbsp Red wine vinegar
- 1/2 cup oranges sliced in half
- 1/2 cup strawberries sliced in half
Add the ingredients except for the red wine vinegar to a salad bowl. Then add the red wine vinegar on top and mix lightly without breaking the fruit. Oh, and did we mention it also looks great! For those of you who need that extra nudge to eat your greens, it always helps to have a good looking bowl of salad in front of you!
